американский рис, nеpyвиaнский шпинат, или лебеда (Chenopodium Quinoa Willd.), из сем. маревых (Salsolaceae Tourn.); однолетнее растение, семена которого мучнисты; разводится для получения их в тех местностях Мексики и Перу, где суровый климат не дозволяет возращать зерновые хлеба; молодые листья употребляются там вместо салата. Сделаны опыты разведения К. и в Зап. Европе.

Quinoa with Broccoli & Cashews
Zesty Quinoa with Broccoli & Cashews

gluten-free, vegan

Quinoa (pronounced KEEN-wah) is a high-protein, gluten-free ancient grain that cooks much like rice and has a texture similar to couscous. Combined with lemon, onion, wine, cashews and sun-dried tomato, you'll enjoy a carnival of flavors and textures. For a delicious vegan entrée, add some baked tofu chunks.
Serves 4

* 1 TB extra virgin olive oil
* 2 cloves garlic, minced
* 1/2 medium red onion, finely diced
* 1/2 cup sun-dried tomatoes, julienned or chopped
* 1/2 cup vegetable broth
* 1/2 cup dry white wine
* 2 TB lemon juice
* 1/2 cup quinoa
* 1/2 tsp sea salt, or to taste
* 1 cup broccoli florets, cut into bite-sized pieces Fresh ground black pepper to taste
* 1/2 cup roasted cashew pieces
* 2 scallions, thinly sliced

Heat the olive oil over medium heat in a saucepan and sauté the onion and garlic for 3 minutes. Add the sun-dried tomatoes, vegetable stock, wine and lemon juice and bring to a boil.

Stir in the quinoa and salt. Reduce heat, and simmer covered about 20 minutes. Add the broccoli on top and simmer an additional 5 to 6 minutes.

Remove from heat, toss gently until combined. Add ground pepper and additional salt, if desired, to taste.

Garnish with cashews and scallions before serving.

quinoa with sauteed vegetables
preparation time: 20 min
on the stove: 20-25 min
serves: 2 people

ingredients
1 cup quinoa
2 cups of water

1 onion
1 red pepper
1 carrot
2 tblsp sunflower seeds
1 tblsp sesame seeds
6 small radishes (if desired)
brocoli (as much or little as you want)
sunflower oil
1 tsp veggie stock
spices! (chilli powder, ginger, pepper, salt, paprika)

* the most important part of this recipe is rinsing the quinoa. in it's natural state, quinoa seed has a bitter saponin coating (a natural defense for repelling insects and birds). before cooking, the seed must be thoroughly rinsed to remove the saponin dust. simply putting the grain in a fine strainer and running warm water over it until the powdery residue has disappeared is sufficient. this takes about three minutes.

preparation:

bring the water to the boil and after rinsing the quinoa, add it and cook for about 10 - 15 minutes (until water has disappeared). as it cooks, the outer germ around each grain twists outward forming a spiral tail attached to the kernel. the grain itself is soft and delicate but the tail is crunchy, creating an interesting texture combination. it's alot lighter on the stomach than other grains.

while waiting for the quinoa to cook, cut the veggies.

heat the pan and add the oil, when hot (but not too hot) fry the onion and then add the sunflower and sesame seeds. cook for 2-3 minutes and then add the spinces!
add all the veggies and then mix the veggie stock with a small amount of water (depending on how saucy you want the dish!) and add to the veggies, turn the heat down and simmer on low for about 10 minutes.

serve and enjoy!

Сварила кашу из квиноа. Было любопытно, что она при промывке не мутит воду. Вкус обычный, как у любой другой каши, может быть больше всего на пшеничную похожа. При варке стала чуть-чуть похожа на рис, прозрачная.

В этой крупе много белков и витаминов и отсутствует глютен, что может быть важным для аллергетиков.

Я на каше из квиноа худела. Варила как рис в микроволновке, без всего, добавляла в салат овощной, заправляла как кускус варено-тушеными овощами, смешивала с сырым яйцом, получилось чтото среднее между паштидой и омлетом. Не что-то, но есть можно. Особенно кто привык и ведет "здоровый образ жизни". Особенно помогает от того, что бабушка называла "тугой желудок". И кто мало зелени ест. Прикольно выглядит в вареном виде ( и в таком-же выходит) Laughing

У меня киноа постоянно в рационе. Готовлю каждый раз по разному, экспериментирую. Очень полезная крупа. Особенно для тех, кто хочет разнообразить свой рацион во время периода сброса веса или для набора качественной мышечной массы при занятиях в спортзале Wink
